Ukrainian Caviar is Entering World Market
Ukraine is trying to become one of the main producers of highest grade black caviar in the World . Ukrainian farm-raised osetra caviar is already popular in Europe, primarily in France. Ukrainian aqua-farmers are working hard to present an exclusive product to the world market.Black caviar is not cheap. If we are talking about high quality black caviar, harvested in traditional method with no GMO, sturgeon that was raised in organic environment and fed with best quality fodder. A 100 gram can of this type of caviar can cost up to 250 dollars in the US. The price is related to investments we put into building our aqua farm and time it takes to grow our sturgeon until it’s ready to produce caviar. It takes the fish up to 12 years for its first spawning.“We place cages with floating metal pipes with air into the Dnipro river. The fish lives here in all natural environment ” explains Anton Yaremenko, Black Caviar Farm Owner. Sterlet and sturgeon live in 3-meter-deep reservoirs along the banks of Dnipro river. European and American market has shown big interest in our caviar. We already supplying big volumes of osetra caviar to France and USA. And this business is already beginning to bear fruit. He has invested in it for about 10 years:“It’s a long-term business. And it is very expensive. I have to constantly reduce costs for my own needs. All money goes to the fish.”The black caviar market is relatively new to Ukraine. Although there were big manufactures of black caviar in Ukraine during USSR. We were able to keep and develop this technologies that were recognized as one of the best in the World. Anton learnt all the intricacies of doing the business in Poland. He worked there to gain experience: “I’d like the Ukrainian fishing sector to match the standards of European Union. I’ve visited many foreign farms and learnt the best technologies to raise fish. Often when you visit European farm there is a poster at the entrance that says “The farm was 70 % financed by the European Union.” It’s great.
Unfortunately, we don’t have this type of luxury in Ukraine. We have to finance all the farm expenses on our own. Generally, the main daily expense of an aqua farm is a fish fodder. We are using all organic Danish fodder Biomarg. Fish responds really well to it and its caviar taste is fantastic” says Yaremenko.
France is already buying the delicacy from us, because the quality of the caviar is very high and the price is twice as cheap compared to European market. In order to sell it abroad, Bester Caviar House has invested a lot of money to create a workshop that would match EU standards. This requires several stages of water and air purification, special wash basins and disinfection methods, special circular room layout.Caviar production is long-term business that takes a lot of effort and financing upfront, but potentially will open the doors for generating new revenues.

It has been a long journey to receive all required paperwork such as CITES, FDA, FISH AND WILDLIFE, HACCP to bring our product to America, one of the largest importers of sturgeon roe. German, French and American experts have already recognized that Bester enterprise is one of the best. Now Americans and Europeans are able to appreciate our high quality osetra caviar in their own countries.
